How to Green Up Your Acai Bowl Recipe

Looking for a new incentive to awaken you from your nights slumber or that second wind” nutritious snack alternative?  The Acai Bowl is just the bill fitter and is gaining in rapid popularity among the hip and healthy.  This new breakfast delight is where smoothie, granola and fruit come together to form a mouthwatering tasty balanced trilogy.   It’s not just the thick blend of the smoothie, the colorful fruit or the crunch of the granola that sets this day breaking frill apart from your other morning treats.  What’s special about this morning bite is the “rave” ingredient known as Acai.   Rich in antioxidants, vitamins and kind to your blood sugar is what gives this Brazilian berry cente r stage among the “superfood” elite.  Acai can be found either as a frozen pulp  in the freezer section or dried as a powder in many healthy food stores.

I like to take this already hefty super packed breakfast bowl and amp it up “green style” by adding in either kale or spinach.  It’s a nutritious indulgence you won’t want to miss. 

What you’ll need :

  • 1 cup nut or seed milk (I like to use my Almond Milk Recipe)
  • 1 tablespoon of freeze dried Acai powder or one serving of frozen Acai pulp.
  • 1 bag (10oz.) of organic frozen fruit
  • 1 tablespoon of nut or seed butter
  • 1 banana
  • 1 large handful of organic spinach or kale
  • 1 1/2 cup of granola


Toppings:

  • cacao nibs
  • hemp seeds
  • fruit
  • nuts

Blend the 6 top ingredients together in a high-powered blender until smooth and the consistency of soft serve ice cream.  Divide the granola into two bowls and top each serving with the thick blended smoothie mixture.  Top with fruit, nuts, or any other tasty toppings of your choice.

Serves 2
