If you are like me finding yourself in the summer with an overabundance of zucchini, then you will find this recipe to be an excellent way to enjoy it.
INGREDIENTS:
- 2 Zucchini peeled & chopped
- 4 cloves of garlic
- 3/4 c. raw tahini
- 1/4 c. olive oil
- 1/2 c. fresh lemon juice
- 1 1/2 tsp sea salt
- 1/2 tsp ground cumin
Blend all the ingredients together in a high speed blender until thick and smooth.
Goes great with your favorite vegis.
