This is the time of the year when Fresh Berries start showing up in the all the markets.  When they do I start craving my Fruity Spring Salad.  What I love about this fruit filled bursting with flavor salad is how fast and simple it is do make.   Best of all when I’m in the mood for eating lite, the creamy cashew dressing turns this dish into a complete meal.  Get inspired with your fruit selections and see what fruity medley creation you come up with!

What you will need:Fruit Salad Recipe

Fruit:
1 cup of organic berries
1 apple chopped
1 banana chopped
1/2 cup goji berries or raisins soaked for 15 minutes or until soft (optional)

For the dressing
1/2 cup cashews soaked
6 dates pitted and soaked for 30 minutes to soften
1 cup filtered water
1 tablespoon of spoon agave nectar or maple syrup
1 tablespoon fresh squeezed lemon
1/4 teaspoon cinnamon
1/4 teaspoon grated or ground ginger
1 pinch of sea or Himalyan Crystal salt

Toppings:
1 tablespoon of chopped walnuts (optional)
1 tablespoon of hemp seeds (optional)

How to Make:

Soak the cashews for at least an hour and rinse to soften the cashews for a creamier texture.
Blend together the cashews and remaining dressing ingredients until smooth and creamy.
Pour the dressing over fruit and sprinkle walnuts and hemp seeds on top.

Serves 2

You can store the fruit salad in a sealed container in the refrigerator for up too two days.
